JARDIN DES SENS - MONTPELLIER

At Jardin des Sens, the cuisine is all about joy and gourmet time. Harmonies of colors and flavors in the plates. Vegetables are emerald green, acid yellow, bright red, eggplant purple and hop, twirl and swirl around the pearly fish and the tender meat. Amaranth red fruits, prunes and raspberries celebrate summer with puff pastry, sweet and iced delights. Deliciously.

4 menus to discover and enjoy: the gourmet, light lunch menu, the "éclats du terroir" menu, filled with local flavors, the delicate "Sens et Saveurs" and the "Sens et Découvertes" menu, grand finale of J&L Pourcel's cuisine. They are all characterized by the creativity and the generosity of the Pourcel brothers.

Appetizer.

Pressed salad of lobster and sweet onions, melon gazpacho, crunchy vegetable roll, vinegar biscuit.

Roasted turbot fillet (or sea bass fillet, subject to availability), "Gardianne-style" squid lasagna with roasted eggplant dip, local meadow mushrooms in their jus.

Roasted pigeon fillet, pigeon leg in ballotine, glazed in Banyuls, vanilla-flavored apple compote, pan-fried mushrooms, "bécasse"-style jus.
 
A selection of matured cheeses.
 
Local strawberries, hazelnut crumble, basil and strawberry sorbet and coulis.
 
Melt-in-your-mouth milky chocolate sphere, passion fruit light cream and frothy sorbet.

Tataki of tuna and herbs, avocado guacamole.

Lukewarm aspic of shellfish, potato and caviar espuma.


Oriental style lobster and its crunchy vinaigrette, coconut emulsion

Grilled red mullet fillet, melon tabouleh of the house, thin slices of ham, southern flavour olive oil. 

Courgette flower stuffed with scampi, scampi roasted in orange, emulsified broth with truffle stock.
 
Pan-fried slice of foie gras, rhubarb and lemongrass crumble, pearly vinaigrette dressing.
 
Steam-cooked pressed fillet of sole, casserole of early morels and grilled asparagus, deglazing sauce.
 
Sherbet of slightly bitter citrus fruit and champagne.
 
Variations on suckling lamb, gnocchi and baby broad beans with mint, slow-cooked lamb samousa, anis-flavored lemon juice and condiment.

Wines included Served for dinner from Mondays to Fridays, and for lunch on Saturdays.
Each dish is served with a glass of Languedoc-Roussillon wine, selected by the Jardin des Sens sommelier.

INSENSE - MONTPELLIER

In the Soulages courtyard, right at the heart of the Fabre Museum, Jacques & Laurent Pourcel took up the wild challenge of opening a restaurant. And they succeeded! Insensé was awarded a bib gourmand and ranked very well in the list of Museum restaurants.

The restaurant comprises two spaces to provide you with a "Pourcely" gourmet experience that will meet your needs and schedule. With a view on a Buren, delicately presented at the entrance of one of the most amazing museums in Europe.

Snacking Eat Nomad serves salads, soups, sandwiches and desserts from 10 AM to 6 PM. Once the weather turns sunny, the restaurant extends over a nice wooden deck and offers a sunny, absolutely Mediterranean menu, with the nicest palette of colors, echoing the art pieces of the nearby museum.
Italy and the East inspire salads. Just like in Sète, the rouille delicately blooms in flavors of sea and land, the fish is extremely fresh, the meat is tender and the desserts are sweet. Insensé, isn't it?

EXHIBITION

Up to July 15th, Insensé exhibits the art pieces of visual artist Patrick Lara.

Patrick has been loving Woman forever. His art pieces are like "freeze-frames". From one canvas to the next, the artist celebrates women. Mystery and poetry. Painting, collage, paper, picture, cardboard and canvas combined to offer a vision of the dreamt woman, the woman of one's dreams and illusions, the femme fatale, the mythical woman, the multifaceted woman, object of fantasies and torments, pleasures and emotions, desire and adoration.

Patrick's women keep amazing and triggering our senses.  As an immense leitmotiv, his ode to women celebrates the deep ambivalence of the artist's eye:  paradoxical voyeur, since all the women depicted are the object of his eye, overexposed. Wouldn't that tell a lot about the one who fashions them? The voyeur is therefore looked at, and the artist infinitely reinterprets his desire.

SUNNY

The sea, crashing against the rocks. The cobalt blue sky and golden yellow sun. In an exceptional location, a place built just like the bow of a boat, ready to slice through the waves, heading for distant destinations. However, there, gourmets travel through tastes.  Which take them directly to the country of flavors. Captain of the boat: General Manager Yohan Valette. Pilots in command: skippers J&L Pourcel.

Whenever you feel like it, come take a seat on the deckchairs or the armchairs. Choose the bar deck and its cocktails and delicious ice creams. Or the restaurant deck, with its 360° view. Or the inside restaurant dining room, to be sheltered from the sea spray and the heat. Or the lounge bar downstairs, facing the foaming waves. Take a look around, the city of Sète is protecting you, Mount Saint-Clair, the sea cemetery, the sea theatre are just there.  And so is the majestic Mediterranean. Sail with your eyes shut, wander motionlessly, enjoy cocktails made by Coralie and Mickael, take time to choose your favourites in the menu designed by Jacques & Laurent Pourcel, performed by chef Sébastien Flament. And when the night comes, and the stars start lighting up the sky, let yourself go on a deckchair, listen to the sweet sounds of the night, dare taking a light nap if you can resist the rhythm of the music coming from the lounge bar.

Surrender to Pourcel cuisine... You already appreciated its creativity, applied to the products that the sea and the gardens kindly shares every day.  A successful combination of land and sea, in the plates and in the place. "La mer qu'on voit danser..."
